Irpinia Campi Taurasini DOC “Appio”: why we like it
The Irpinia Campi Taurasini DOC “Appio” red wine is born from 100% Aglianico grapes, selected manually with care and vinified and aged in ceramic amphorae. Cavalier Angelo Pepe choses its name to pay homage to the Via Appia, which connected ancient Rome to the current city of Brindisi. The grapes come from the Piergolo vineyard in Luogosano, located at an altitude of 400 meters above sea level. which has been implanted on a type of sandy loam clayey soil with volcanic elements. Its production is limited to about 2,000 bottles per year which are individually numbered.
The grapes are harvested by hand at full ripeness from the vineyard planted in 1970 and reared with the ancient and typical system in “Starseta”, generally in early November. The grapes, de-stemmed at low speed, are fermented and macerated in amphora for 20 days, with manual pumping over and punching down. After maceration, the wine continues its refinement for 24 months in amphora and for a small part in barrique. Subsequently, Appio continues its refinement in the bottle for another 24 months.
The elegance of Appio makes the wine extremely versatile in food and wine pairings, being able to accompany the meal starting with hot appetizers based on vegetables and meat, to go to the first courses, with well-seasoned pasta, red meat-based sauces, to arrive at medium-structured second courses, such as a cut of beef, or even medium-aged cheeses.
