Irpinia Aglianico DOP “Bucce Nere”: why we like it
“Bucce Nere” is obtained from a careful selection of 100% Aglianico grapes from vineyards located in the municipality of Taurasi and neighboring municipalities. This wine is not filtered, having a very low sulphite content, and it is not clarified with animal-based adjuvants.
The grapes are harvested by hand in the first half of October and transported to the cellar where they are carefully processed. Maceration on the skins takes place for over 15 days with daily manual pumping over. Subsequently it spends a period of maturation in local chestnut barrels, then in steel and finally it spends a period of refinement in the bottle.
The specific characteristics of this wine match elegantly with first courses based on sauces, roasted and grilled red meats, medium-aged cheeses, cured meats. It is recommended to taste it in a large balloon at a serving temperature of 18°C.
