Irpinia Aglianico DOC Biologico, produced by the Boccella Rosa winery, is a wine with a lively ruby red colour with violet reflections. With a strong personality, this red wine has an olfactory profile which recalls notes of black cherry in alcohol, red fruits, plum, black pepper and floral notes of typical violets. Its flavour results fresh, tannic, pungent and energetic. The acidity binds perfectly with the tannin, a ripe tannin at the right point. A really pleasant tasting experience that closes with a unique and unmistakable finish.

Irpinia Aglianico DOC Biologico by Boccella Rosa: why we like it
Irpinia Aglianico DOC Biologico, produced by the Boccella Rosa winery, is a fruity, full-bodied red wine that enhances the quality of this legendary vine from which it is obtained. It is obtained from the vinification of 100% Aglianico grapes, one of the most representative varieties of the Campania region. The vineyards on which the grapes are grown are located at about 550 metres above sea level and they rest on a substratum – that of the Irpinia region – which differs from the coastal areas as it is mainly composed of clay, a layer of limestone and some volcanic deposits. The characteristic of the soil, linked to its nature of volcanic origin, gives the grapes a marked minerality and a pleasant freshness.
The harvesting process takes place strictly manually to ensure the quality of the raw material, in fact the grapes are organized with a grownig system called guyot, which allows a safe harvest of the bunches directly by hand, with meticulousness. Once collected and deposited in the special boxes, the grapes are transported to the cellars, where the processing period will begin. The grapes will spend a 20-day vinification period in steel tanks, after which they will be processed and aged for 12/16 months in 20-hectolitre oak barrels and refined for a further long period, directly in glass bottles.
This Irpinia Aglianico DOC Biologico is a fresh and energetic wine, it fits particularly well with well-structured cuisine of all kinds such as game, roasts, braised meats and stews, which enhance the marked acidity of the wine.
For the best tasting experience, it is advisable to maintain a temperature of 18/20 C ° and take advantage of large glasses to favour a partial decanting process.
