Irpinia Aglianico Passito DOC: why we like it
This Irpinia Aglianico Passito DOC wine is obtained from the careful selection of 100% Aglianico grapes from vineyards located in the municipality of Luogosano (AV), at an altitude of 400 meters above sea level, and characterized by a clayey-calcareous soil type. The vineyards are cultivated with a density of 5000 vines per hectare and a production of 11.5 quintals of grapes from which 4.5 hl of wine derive.
The grapes are harvested by hand in boxes during the first week of November after an initial drying process that takes place on the plant itself. Subsequently they are transported to the cellar where the fermentation process takes place on the peels in steel tanks for 30 days at a controlled temperature between 20° and 24°. The refinement is elaborate and involves a double passage in barriques for 6 months each time, the first one in French oak and the last phase in cherry before remaining in the bottle for a further 6 months. The use of wood is measured, it partially smooths out the vigorous edges of the vine allowing the emergence of gentle tones. The result is a unique, authentic wine.
The specific characteristics of this wine are able to involve the palate in combinations ranging from red fruit tart to cheeses such as blue goat cheese but it is also definitely suitable for relaxing moments of reflection in a pleasant after-dinner in front of a fireplace. It is recommended to taste it in a large glass at a service temperature of 16°C.
