Taurasi Riserva DOCG “Santa Vara”: why we like it
The beauty and versatility of the Aglianico vine are excellently expressed in this Taurasi Riserva DOCG wine by La Molara, representing the maximum expression of this very high quality vine. It is obtained from a scrupulous selection of 100% Aglianico grapes from the vineyards owned by the winery located in the municipality of Luogosano, specificly suited to the production of the Taurasi Riserva DOCG wine, at an altitude of 400 meters above sea level, and characterized by a clayey soil type- calcareous. The vineyard is cultivated with a density of 6000 vines per hectare and a production of 70 quintals of grapes from which 45 hl of wine derive.
The grapes are harvested by hand in boxes in the first ten days of November, then transported to the wine cellar where they are carefully selected. Fermentation takes place in steel tanks in contact with the peels for 15/20 days at a controlled temperature between 20° and 24°. Subsequently it spends a period of maturation of 12 months in steel and 24 months in French oak tonneaux. Finally, the refinement in the bottle takes place for at least 12 months. The result is a wine with great structure and captivating aromatic complexity, destined to tell its story over time.
The specific characteristics of this wine are elegantly combined with red meat main courses, game, truffle-based first courses and well-aged cheeses. It is recommended to taste it in a large ballon at a service temperature of 18°C after resting in the decanter for at least an hour.
