Irpinia Campi Taurasini DOC “Valeria”: why we like it
“Valeria” is obtained from a scrupulous selection of 100% Aglianico grapes from the vineyards owned by the winery located in the municipality of Luogosano, particularly suited to the production of the Taurasi Riserva DOCG wine, at an altitude of 400 meters above sea level, and characterized by a type of clayey-limestone soil. The vineyard is cultivated with a density of 5000 vines per hectare and a production of 80 quintals of grapes from which 55 hl of wine derive.
The grapes are harvested by hand in boxes in the first days of November, then transported to the wine cellar where they are carefully selected. Fermentation takes place in steel tanks in contact with the peels for 12/15 days at a controlled temperature between 20° and 24°. Subsequently it spends a maturation period of 12 months in steel and 6 months in French oak tonneaux. Finally, the refinement in the bottle takes place for at least 4 months. The result is a characteristic, full-bodied, fine and pleasant wine.
The intense and specific characteristics of this wine are elegantly matched with red meat main courses and medium-aged cheeses. It is recommended to taste it in a large ballon glass at a service temperature of 16°C after resting in the decanter for at least an hour.
