Irpinia Campi Taurasini DOP “Nero Latino”: why we like it

This Irpinia Campi Taurasini DOP red wine, produced by the Miér Vini winery, is an expression of the beauty and versatility of the Aglianico grapes well exalted in the expression of “Nero Latino”, showing the very high quality of this vine. This wine is produced only in the most favorable years and is obtained from a scrupulous selection of pure Aglianico grapes from vineyards located in the municipality of Taurasi, particularly suited to the production of this designation. Furthermore, it has a very low sulphite content and is not clarified with animal-based adjuvants.

The grapes are harvested by hand in boxes in the first week of November, then transported to the cellar where they are carefully selected. The maceration on the skins takes place in chestnut vats, in a controlled temperature environment and lasts for over 20 days. Traditional daily operations are carried out until racking using manual techniques. Once the fermentation process is complete, this wine matures for approximately 6/8 months in chestnut tonneaux and finally a brief passage in oak barrels. It is subsequently transferred to stainless steel containers and finally into the bottle for the final refinement period. Unfiltered, with very low sulphite content, not clarified with animal-based adjuvants. The result is a wine with great structure and captivating aromatic complexity, destined to tell its story over time.

The intense and specific characteristics of this wine match perfectly with important dishes, haute cuisine, game, roasts and grilled meats, mature cheeses, cured meats. It is recommended to taste it in a ballon glass at a service temperature of 18°C ​​after resting in the decanter for at least an hour.
