Irpinia Aglianico DOC “Terra del Varo”: why we like it
The Irpinia Aglianico DOC “Terra del Varo” red wine is the result of the vinification of Aglianico (85%) and Merlot (15%) grapes. The vineyards are located between Taurasi, Luogosano and Sant’Angelo all’Esca at an altitude of 350 m a.s.l., an area which is characterized by a type of calcareous clayey soil with the presence of volcanic elements.
The grapes are harvested by hand and selected first in the vineyard and then in the cellar. After the destemming phase it is the turn of the cold pre-fermentation maceration and the alcoholic fermentation at a controlled temperature with maceration on the skins for about 10 days. Aging for 24 months in concrete tanks and at least 6 months in the bottle.
As far as food pairings are concerned, it matches particularly well with appetizers of cured meats and cheeses, pasta with sauces, roasted meat, dishes and pizzas made with savory sauces and condiments. Service temperature of 16-18°C.
