Irpinia Aglianico DOC “Immenso”: why we like it
“Immenso” is obtained from 100% Aglianico grapes from vineyards located in the municipality of Castelvetere sul Calore, at an altitude of 400 meters above sea level, and characterized by a clayey-limestone soil type . It is a vineyard that extend itself for 8000 meters and with 25 years of age, cultivated with a density of 2500/3000 vines per hectare and a production of 70 quintals per hectare.
The grapes are harvested by hand in boxes between the beginning and mid-November, then transported to the wine cellar where the fermentation process takes place in 50-hectolitre steel tanks. The maturation period of at least 12/14 months takes place in 225 liter oak barrels and 500 liter chestnut barrels. Finally, it spends a period of refinement in the bottle for 3 months.
The characteristics of this wine match elegantly with red meat main courses, game, aged cheeses. It is advisable to uncork the bottle at least one hour before tasting and to serve it at a temperature of 18°C.
