Fiano di Avellino DOCG “Incanto”: why we like it
“Incanto” is obtained from carefully selected 100% Fiano grapes, coming from vineyards located in the municipality of Lapio (AV), an area particularly dedicated to the Fiano di Avellino DOCG’s production, at an altitude of 300 meters above sea level. It is a 15-year-old vineyard, cultivated with a density of 2500/3000 vines per hectare and a production of 75 quintals per hectare.
The grapes, harvested by hand in boxes in mid-October, are transported to the cellar for an extremely soft pressing of the ripest grapes. The fermentation process takes place in steel tanks at a controlled temperature of 8°C for about 3 months. Subsequently, during the maturation period it rests on the lees until complete clarification. Finally it spends a period of refinement in the bottle for 3 months.
The characteristics of this wine elegantly match with dishes based on fish and shellfish, white meats and soft cheeses. A serving temperature of 10°/12° C is recommended.
