Vino Spumante Rosato Brut “Follia”: why we like it
“Follia” is obtained from 100% Aglianico grapes, coming from vineyards located in the municipality of Castelvetere Sul Calore in the Valiano area, at an altitude of 400 meters above sea level, and characterized by a clayey-limestone soil typology. It has to do with a vineyard with an extension of 3000 meters, cultivated with a density of 2500/3000 vines per hectare and a production of 80 quintals per hectare.
The grapes are harvested by hand in boxes at the end of September, then transported to the wine cellar. The fermentation process takes place in steel tanks at a controlled temperature and finally, after a minimum of 9 months of permanence on the lees in the bottle, the winemakers proceed with the “dégorgement” operation, which consists in eliminating the sediment that the “remuage” has brought to concentrate in the bottle’s neck.
Its specific characteristics allow a wide versatility in food pairings: dishes based on fish and shellfish, as well as pizza and fresh cheeses. Perfect for aperitifs. Service temperature of 8°/10° C.
