Classic “Gold” sparkling wine: why we like it
The grapes come from local white grape varieties located in the hill towns of Luogosano and Sant’Angelo all’Esca, at an altitude of 350 m a.s.l. and exposed to south/east, which present a clayey-calcareous type of soil with volcanic outcrops.
The vinification takes place through the soft pressing of the whole bunch. The must is cold clarified and ferments at a controlled temperature in stainless steel tanks. Then the second refermentation in the bottle follows.
Ideal for food pairings with raw fish and seafood first courses; it also matches with more elaborate dishes such as fatty fish with sauces, seafood risottos and cod “alla pertecaregna”. Service temperature of 7-8°C.
