Taurasi DOCG “Delisio”: why we like it
This Taurasi DOCG produced by Tenuta De Lisio shows the beauty and versatility of the Aglianico grapes highlighted in this wine, highlighting the great quality of this grape variety. The vineyards are cultivated with spurred cordon on clayey and basically calcareous soil with a density of approximately 3,000 plants per hectare. This wine is obtained from a scrupulous selection of pure Aglianico grapes coming from vineyards located in the municipality of Montemarano, in the Taurasi DOCG wine-growing area.
The grapes are harvested by hand in boxes at the beginning of November, then transported to the cellar where they are carefully selected. The maceration takes place with fermentation at an uncontrolled temperature with two daily pumping over and lasts for 25 days. The wine completes the maturation and refinement processes for approximately 24 months in barrique, followed by a period in steel tanks, and then finishes in the bottle. The result is a wine with great structure and aromatic complexity that improves over time.
Its intense and specific characteristics combine with important dishes of haute cuisine, roasts, game and mature cheeses. It is recommended to taste it in a large balloon at a serving temperature of 16°-18°C after a period of time in a decanter.
