Taurasi DOCG Bio by Boccella Rosa: why we like it
Taurasi DOCG Bio, produced by the Boccella Rosa winery, is an intense and fragrant red wine that is obtained from the exclusive vinification of the grapes deriving from the Aglianico vine, one of the most representative varieties of the Campania region. The vineyards on which the grapes are grown are located at about 550 metres above sea level, resting on a substratum with strong clayey, limestone and sandstone components. The most important characteristic of the soil is undoubtedly linked to its nature of volcanic origin, which gives the grapes a marked minerality, allowing a red wine like this to express itself with a pleasant freshness.
Once it has been verified that the grapes have reached full ripeness, a strictly manual harvest process begins in the first ten days of November to guarantee the quality of the raw material. When the grapes arrive in the cellar, they undergo an initial fermentation process, which lasts just under a month, taking place in oak vats. The subsequent aging phase, again in oak barrels, can extend for a period of two or three years depending on the vintage and it is completed by a further refinement in the bottle, where the wine seals its complex aromas.
Complex and enveloping wine, it fits particularly well with well-structured cuisine of all kinds, roasted red meats, game, hard or aged cheeses.
For the best tasting experience, it is important to serve it at a temperature between 16 and 18 ° C.
