Taurasi DOCG “Padre”: why we like it

This Taurasi DOCG “Padre” produced by the “La Cantina di Enza” winery fully reveals all the characteristic elements of the Aglianico grapes, grown and processed by the owner and his father. This wine is obtained from the use of only Aglianico grapes grown with a certified organic regime and without synthetic chemistry in the passage from the vineyard to the cellar, coming from the vineyards located in the municipality of Montemarano, whose territory is particularly suited and famous for the production of Taurasi DOCG.

The grapes are harvested by hand, then transported to the cellar where they are subjected to a spontaneous fermentation process for a period of 20/30 days, without any temperature control. It does not undergo filtering or clarification operations and since 2013 the doses of sulphurous elements added have been gradually decreased until its complete elimination in the most recent years. The aging procedures take place in large chestnut barrels for 12 months, then continue in small exhausted oak barrels for another 12 months and finish aging in the bottle for another 12 months.

Its specific characteristics pair well with dishes with an accentuated aromatic depth, such as first courses with meat sauce, red meats, roasts, braised meats, poultry, casseroled feathered game, hard cheeses. It is recommended to taste it at a serving temperature of 16 – 18°C.
