Campania Rosato “Nata Rosa” IGP: why we like it
This Campania Rosato “Nata Rosa” IGP produced by La Cantina di Enza enhances the characteristics of the Aglianico grapes, processed in purity for the creation of this wine, obtained from grapes coming from vineyards located in the municipality of Montemarano, in the heart of the Irpinia wine-growing area.
The grapes are harvested by hand in 20 kg boxes in the first ten days of November, then transported to the cellar where they are carefully processed. Maceration takes place for approximately 15-20 days, a soft pressing is then carried out with a manual press and the fermentation process continues without temperature control, filtering and without the addition of sulphurous elements. The aging procedures take place in old large chestnut barrels for at least 12 months, and then continue in the bottle for another 12 months.
Its specific characteristics combine well in combination with appetizers based on sliced cured meats, well-matured and tasty cheeses, but also first and second courses of land.
