Aglianico Naturale “Dall’Uva”: why we like it
This organic red wine “Dall’Uva” produced by the “La Cantina di Enza” winery tells the story of the authenticity and potential of the Aglianico grapes, used in purity for its realisation. “Dall’uva” is obtained from only Aglianico grapes grown under a certified organic regime, coming from vineyards located in the municipality of Montemarano, in the heart of the Irpinia wine-growing area, famous for the Campania wines made from the grapes of this historic variety.
From the vineyard to the wine cellar, all operations are personally followed by Enza Saldotta and her father, without the help of oenologists or agronomists, but thanks to the experience of four generations dedicated to working the land and in particular to the cultivation of native vines. The fermentation process occurs spontaneously, without any temperature control and without the addition of chemical or sulphurous substances.
Its specific characteristics pair well with simple dishes, such as tomato pasta, but it is also well suited to red meat dishes and fresh and mature cheeses.
