Falanghina del Sannio DOC: why we like it
This Falanghina del Sannio DOC, first made in 1979, is produced with pure Falanghina grapes from vineyards planted in the territory of the municipality of Sant’Agata dei Goti, in the province of Benevento. The vineyards are located about 250 meters above sea level, on soil consisting of volcanic, limestone and clay elements that confer special benefits to the plants grown and the grapes produced, and enjoy a south/southwest exposure. The training system used is guyot, with a density of 3300 vines and a production of 70 ql of grapes per hectare.
After harvest, once the grapes arrive at the winery, fermentation begins in steel vats at a controlled temperature of 15°C for about two weeks. Aging procedures take place on the fine lees in steel with periodic batonnage for 3 months and then finish in the bottle for an additional 2 months.
The result is an intense and harmonious wine, recommended for pairing with appetizers with seafood, shellfish and with fresh fish carpaccio. Also excellent with chicken main courses such as rolls with bacon and asparagus. To enjoy it at its best, it should be served at a temperature of 10-12°C.
