Falanghina del Sannio DOC Sant’Agata dei Goti “Vigna Segreta”: why we like it
This Falanghina del Sannio Sant’Agata dei Goti DOC is produced with pure Falanghina grapes from vineyards planted in the territory of the municipality of Sant’Agata dei Goti, in the locality of Santacroce, in the heart of the wine district of the famous Sannio DOC appellation. The vineyards are located at about 300 meters above sea level, on soil consisting of volcanic, limestone and clay elements that confer special benefits to the plants, and enjoy a southeastern exposure. The training system used is guyot, with a density of 3300 vines and a production of 70 ql of grapes per hectare.
After harvest, once the grapes arrive at the winery, the fermentation phase begins, preceded by a light cold pellicular maceration. This is followed by aging in steel on fine lees for about 10 months and in bottle for another 12 months.
The result? An elegant, velvety wine that goes well with risotto, pasta with very tasty sauces, in white, spaghetti alla Nerano or with the classics of seafood cuisine, spaghetti with clams and seafood strictly without tomato. To enjoy it at its best, serve at a temperature of 12° C.
