Sannio Aglianico DOC from Cantine Mustilli: why we like it
This Sannio Aglianico DOC, first made in 1978, is produced with pure Aglianico grapes from vineyards planted in the territory of the municipality of Sant’Agata dei Goti, famous for the celebrated Sannio DOC appellation. The vineyards are located at about 250 meters above sea level, on soil consisting of volcanic, limestone and clay elements that give special strength to the plants and characterize the organoleptic properties of the grapes, and enjoy a southern exposure. The training system used is guyot, with a density of 5,000 vines and a production of 70 ql of grapes per hectare.
After harvest, once the grapes arrive at the winery, the fermentation and maceration phase begins in temperature-controlled stainless steel for about ten days with subsequent malolactic fermentation. Aging procedures take place in steel for 5-10 months, then finish in the bottle for a minimum of 3 months.
The result is a full-bodied and elegant wine, recommended for pairing with lasagna, pasta with game ragout or traditional Neapolitan ragout. It also pairs perfectly with chicken cacciatore and semi-mature cheeses. It is recommended to serve at a temperature of 15° C.
