Quality rosé extra brut Metodo Classico sparkling wine: why we like it
This extra brut Metodo Classico quality rosé sparkling wine, made starting in 2021, is produced from Piedirosso (50%) and Aglianico (50%) grapes from the vineyards grown in the territory of the municipality of Sant’Agata dei Goti, an area renowned for the production of fine wines collected under the Sannio DOC appellation. The vineyards are situated at about 250 meters above sea level on soil consisting of volcanic, limestone and clay elements with a southwest exposure. The training system used is guyot, with a density of 5,000 vines and a production of 60 ql of grapes per hectare.
The grapes are harvested and selected by hand in mid-October, then arrive at the winery where their fermentation takes place in steel vats at a controlled temperature of 15°C for about two weeks. This is followed by a process of refermentation in the bottle, 24 months of aging on the lees and remuage by hand.
The characteristics of this wine make it ideal in accompanying fish dishes even raw, as an aperitif and throughout the meal, perfect for moments of relaxation and joy in company. To enjoy it best, serve at a temperature of 8-10° C.
