Sannio Aglianico Sant’Agata dei Goti DOC “Cesco Di Nece”: why we like it
This Sannio Aglianico Sant’Agata dei Goti DOC, first made in 1981, is produced with pure Aglianico grapes from vineyards planted in the territory of the municipality of Sant’Agata dei Goti, in the Cesco di Nece locality, which gives its name to the wine, in the heart of the wine district of the famous Sannio DOC appellation. The vineyards are located at about 300 meters above sea level, on soil consisting of volcanic, limestone and clay elements that confer special benefits to the plants, and enjoy a southeastern exposure. The training system used is guyot, with a density of 3300 vines and a production of 50 ql of grapes per hectare.
After the harvest, once the grapes arrive at the winery, the fermentation phase begins, which takes place in steel tanks and lasts about fifteen days. Maturation then takes place in 1000-liter French oak barrels of second and third passage for 18 months followed by aging in bottles for a minimum of 12 months.
The result? A structured, full-bodied wine that is excellent paired with long-cooked meat dishes, such as braised wild boar or with game stews. Also a perfect companion to barbecued meats such as beef steaks and lamb chops. To fully appreciate its qualities, serve at a temperature of 16° C.
