Vino Passito “Phileno” by Cantine Mustilli: why we like it
This Vino Passito, made for the first time in 1987, is produced with Falanghina (50%), Malvasia (25%), Fiano (25%) grapes, coming from vineyards planted in the territory of the municipality of Sant’Agata dei Goti, in Santacroce locality, in the district of Benevento. The vineyards are located approximately 250 meters above sea level, on volcanic, limestone and clayey soil and with a south-east exposure of the vineyards. The training system used is Guyot, with a density of 3,300 vines and a production of 50 quintals of grapes per hectare.
The grapes are selected and harvested by hand, then they are laid out to dry in the fruit room for a period of approximately 40 days. Once the grapes arrive in the wine cellar, after a short cold maceration, fermentation takes place in steel at a controlled temperature for about 2 weeks, leaving a pleasant sugary residue at the end. The aging procedures continue in French oak barriques for 10 months.
The characteristics of this wine make it an ideal companion for Neapolitan pastiera or jam tart. It also matches very well with blue cheeses. To best enjoy it, serve at a temperature of 14°C.
