Irpinia Campi Taurasini DOC “Sallù”: why we like it
This Irpinia Campi Taurasini DOC “Sallù” red wine is an authentic expression of the pure Aglianico vine, coming from the fine vineyards of Montemarano, in the heart of the Taurasi DOCG wine-growing area. Here, the vines grow lush on clay and limestone soils, cared for with the spurred cordon method, at a density of approximately 3,000 plants per hectare.
The harvest, strictly manual, takes place at the beginning of November. The carefully selected grapes undergo maceration with fermentation at an uncontrolled temperature, enriched by two daily pumping overs for 20 days. The wine completes refinement and maturation for approximately 12 months in 3rd/4th passage barriques and subsequently with assembly in steel tanks before completing refinement in the bottle for 6 months.
The result? A wine of extraordinary structure and aromatic complexity, capable of enhancing first and second courses based on elaborate red meat and mature cheeses. To fully appreciate its qualities, serve it in a large balloon at a temperature of 16°-18°C.
