Sannio Piedirosso DOC from Cantine Mustilli: why we like it
This Sannio Piedirosso DOC, first made in 1980, is produced with 100% Piedirosso grapes from vineyards planted in the territory of the municipality of Sant’Agata dei Goti, in the heart of the wine-growing district of the famous Sannio DOC appellation. The vineyards are situated at about 250 meters above sea level on soil consisting of volcanic, limestone and clay elements and enjoy a southern exposure. The training system used is guyot, with a density of 3300 vines and a production of 60 ql of grapes per hectare.
After the harvest, once the grapes arrive at the winery, the fermentation phase begins, which takes place in temperature-controlled stainless steel for about ten days. Malolactic fermentation and subsequent maturation take place in steel vats for 5-10 months. Aging procedures continue in the bottle for an additional 3 months.
The result is an intense wine, excellent paired with pasta with meat sauce, pasta timbale with tomato sauce, rice sartù in red, and timbale of anelletti Sicilian style. Also suggested on fish soups with tomato like crock. It is recommended to serve at a temperature of 13° C.
