Fiano di Avellino DOCG by La Molara: why we like it
This Fiano di Avellino DOCG wine is obtained from the careful selection of 100% Fiano grapes from vineyards located in the municipality of Lapio (AV), at an altitude of 450 meters above sea level, and characterized by a clayey soil type. The vineyard is cultivated with a density of 3500 vines per hectare and a production of 90 quintals of grapes from which 55 hl of wine derive.
The grapes are harvested by hand in boxes in mid-October and transported to the wine cellar where they are carefully selected. Fermentation takes place in steel tanks for 20/30 days at a controlled temperature between 12° and 15°. Subsequently it spends a period of refinement in steel for 8 months and at least 3 months in the bottle. The result is a characteristic, full-bodied, fine and pleasant wine.
The specific characteristics of this wine elegantly match with more delicate fish dishes, first courses based on shellfish and seafood, buffalo mozzarella. It is recommended to taste it in a tulip goblet at a service temperature of 10°C.
