Irpinia Campi Taurasini DOC “1931”: why we like it
This Irpinia Campi Taurasini DOC “1931” by Antonio Covuccia expresses the typicality of Aglianico grapes, carefully cultivated in the historic vineyards of Contrada Carazita, an area of excellence in Taurasi. The grapes are harvested manually in small crates in the third decade of October and immediately brought to the winery to be processed using traditional methods. Skin maceration for about 15 days allows the intense aromas of fruit and underbrush to be enhanced, giving the wine a well-balanced structure and evolving tannins.
After fermentation, the wine matures for six months in French oak and chestnut barrels, developing depth and complexity, with a slight spiciness. Finally, it completes its maturation in the bottle. The result is an elegant and harmonious wine that retains the typical character of Aglianico and is suitable to accompany a variety of dishes.
Its special characteristics make it ideal for pairing with grilled meats, roasts, game, cured meats and aged cheeses. It is recommended to be enjoyed at a serving temperature of 18-20 °C.
