Cooked Aglianico Grape Must “Must”: why we like it
“Must” is obtained from the careful selection of Aglianico, coming from vineyards located in the Taurasi DOCG area.
Must is obtained by cooking fresh grape must. After a brief cold sedimentation of the must, we move on to slow cooking of the must, generally 6/8 hours, to obtain a reduction of about a quarter of the initial product at the end of cooking process.
Ideal for desserts, sorbets and granitas. Excellent paired with cheeses, meats and traditional local dishes.
