Campania Falanghina IGP “Chiaro di luna”: why we like it
“Chiaro di luna” is made from the careful selection of 85% Falanghina grapes and a 15% of other grape varieties, from vineyards located in the Beneventano area.
The grapes are harvested by hand at the beginning of October and transported to the cellar where they are carefully processed. The winemaking takes place with cold maceration and the fermentation of the cold decanted must takes place at a controlled temperature. Then it spends a careful period of refinement in steel tanks and finally another refinement period in the bottle. The result is a wine with very low sulphite content.
The characteristics of this wine make it excellent as an aperitif and in combination with appetizers, risottos, white meats, raw and cooked fish dishes, buffalo mozzarella and fresh cheeses. It is recommended to taste it in a tulip glass at a serving temperature of 10 – 12°C.
