Irpinia Rosato DOC “Vela Vento Vulcano”: why we like it
Vela Vento Vulcano is the result of the vinification process of 100% Aglianico grapes from vineyards located in the hilly area of the towns of Luogosano and Sant’Angelo all’Esca, where the soil is clayey-sandy with abundant volcanic elements.
The vinification process starts with the beginning of the harvest, in the first ten days of October, with the hand picking and selection of the grapes. In order to maximize the colour and the primary aromas of the wine, the same grapes are divided, directly pressed and subjected to cold skin maceration. The obtained must is first decanted and then fermented at a low temperature for about three weeks.
This is a very versatile rosé wine, excellent in combination with all fish-based dishes, as well as cheeses, cold cuts, white meat courses or vegetables combined with light sauces. It is a pleasant discovery in combination with the “Buffalo Mozzarella” and the “Burrata”.
