Irpinia Coda di Volpe DOC “Bianco di Bellona”: why we like it
The white wine called “Bianco di Bellona” is the result of the vinification process of the Coda di Volpe vine, sited in the hilly area of the localities: Carazita, Piesco and Pesano in the territory of the town of Luogosano and in the locality named Brussineta, located in the territory of the town of Sant’Angelo all’Esca, where the soil is clayey-sandy with abundant volcanic elements.
Produced with 100% Coda di Volpe grapes, this Campania white wine is dedicated to the goddess of war from Roman mythology, described as fierce in battle as voluptuous in her “rest”. In fact, the story recounts that she loved to celebrate his triumphs together with the troops, watering her “libations” with a lot of inebriating and dreamy wine.
The grapes harvested in the middle of October are selected in the vineyard and in the cellar, where they are entirely pressed. The “flower must” is cold clarified and then fermented at low temperatures. A short period of aging process follows on the fine lees and then in the bottle.
This is a very versatile white wine, excellent on all fish, sushi and tartare based dishes as well as white meat or vegetable dishes combined with light sauces. It is a pleasant discovery in combination with the “Buffalo Mozzarella” and the “Burrata”.
