Irpinia Campi Taurasini DOC “Santo Stefano”: why we like it
“Santo Stefano” is the result of the 100% Aglianico grapes’ vinification, coming from the Tenuta’s vineyards. The vineyards are located in the hilly area of the municipalities of Taurasi, Luogosano and Sant’Angelo all’Esca, at an altitude of 350 m a.s.l., which are characterized by a clayey-calcareous soil type with evident volcanic outcrops.
The grapes are harvested when fully ripe, then transported to the cellar, selected by hand and de-stemmed. Fermentation takes place in steel tanks at a controlled temperature and maceration with the skins lasts about 2 weeks. This red wine ages in French oak barrels for 12 months and then for 24 months in concrete tanks, finally at least another 6 months in the bottle.
It matches with gastronomic pairings based on game and aged cheeses. Service temperature of 18-20 °C. Uncork the bottle one hour before serving.
