Taurasi DOCG “Opera mia”: why we like it
Aglianico, a high quality grape variety, has found the best territory in the green hills of Irpinia to be able to express itself. “Opera Mia” is the result of the pure vinification of Aglianico grapes from the “Carazita” and “Pesano” vineyards, located in the municipalities of Luogosano and Sant’Angelo all’Esca at 450 meters above sea level. and with a clayey-limestone type of soil with evident volcanic outcrops.
The grapes are harvested when fully ripe, transported to the cellar where they are carefully selected before being destemmed. The fermentation process takes place at a controlled temperature and maceration “on the skins” lasts for about 20 days. After fermentation, it ages in French oak barriques for 12 months, then in concrete tanks for another 24 months and finally for at least 12 months in the bottle.
It matches particularly with roasted meat dishes, game, aged cheeses and sausages with an intense flavour, braised and stuffed pasta, elaborate ethnic dishes. Uncork and decant the bottle an hour before and serve at a temperature of 18 ° C.
