Fiano di Avellino Riserva DOCG “Brancato”: why we like it
Brancato results from the Fiano selection, worked with care and raised in wood to enhance the structure, elegance and longevity of the wine. It is the expression of a product faithful to the ancient traditions of Irpinia viticulture. The vineyards, located in the hilly area of the municipality of Lapio, have a clayey-silty type of soil on a marly base.
The grapes, harvested by hand when fully ripe, are strictly selected and whole pressed, then only the free-run must is first cold decanted and then inoculated for alcoholic fermentation. The fermentation process takes place for one part in French oak barriques and finally in steel at low temperature. The wine remains in sur-lie aging always in wood and steel and finally refines at least 6 months in the bottle.
It is a wine of great versatility in terms of food pairings. In fact it matches with structured dishes, soups, fatty fish, legumes, risottos and white meats and fairly fresh cheeses; dishes with a strong aromatic profile. Service temperature of 12-14 ° C.
