Greco di Tufo Riserva DOCG “Grancare”: why we like it
Grancare is the selection of Greco di Tufo, vinified with care and raised in wood to enhance the structure, elegance and aroma of the grape. Expression of a product linked to the traditions of Irpinia viticulture. The vineyards are located in the highest areas of the municipalities of Torrioni and Montefusco, at an altitude of 600 – 750 meters a.s.l. and have a predominantly clayey and loamy soil type with good limestone content and the presence of volcanic elements.
The grapes, harvested by hand around mid-October, are strictly selected, whole pressed and only the free-run must is cold decanted and then inoculated for alcoholic fermentation. The fermentation process takes place for one part in French oak barriques and finally in steel at low temperature. The wine remains in sur-lie aging always in wood and steel and then concludes with an aging phase of at least 6 months in the bottle.
It matches perfectly with well-structured dishes based on both fish and white meat, blue fish or salted cod, fried fish, also ideal for ethnic dishes, vegetable soups and medium-aged cheeses. Service temperature of 12-14 ° C.
