This Irpinia Campi Taurasini DOC “Patres” fully expresses the character of the Aglianico grape, cultivated with dedication to preserve its integrity. The grapes are harvested by hand in the last decade of October, fermented at a controlled temperature and subjected to a long maceration on the skins. Malolactic fermentation, carried out entirely in steel, contributes softness and a balanced structure to the wine.
Aging is a carefully curated process that includes an initial 12-month rest in steel, followed by 8 months in French oak barriques, where the wine acquires greater complexity and finesse. Before being marketed, Patres rests further in bottle for 3 months, thus ensuring a complex aromatic profile and extraordinary taste elegance.
Its special characteristics make it ideal to accompany structured first courses, red meats, roasts, game and aged cheeses. It is recommended to be enjoyed at a serving temperature of 16-18 °C.
