Irpinia Aglianico DOC “Vincarl”: why we like it
This Irpinia Aglianico DOC “Vincarl” red wine is obtained from pure Aglianico grapes coming from vineyards located in the municipality of Montemarano, in the Taurasi DOCG wine-growing area. The vineyards are trained with spurred cordon on clayey and basically calcareous soil with a density of approximately 3,000 plants per hectare.
The grapes are harvested by hand in boxes at the beginning of November, then transported to the cellar where they are selected. The maceration takes place with fermentation at an uncontrolled temperature with two daily pumping over and lasts for 10-15 days. The wine completes refinement and maturation for approximately 6 months in 3rd/4th passage barriques and subsequently with assembly in steel tanks before completing refinement in the bottle for 6 months. The result is a wine with good structure and aromatic texture.
Its particular characteristics pair well with first and second courses of meat and medium-aged cheeses. It is recommended to taste it in a large balloon at a serving temperature of 16°-18°C.
