Irpinia Fiano Brut Sparkling Wine by La Molara: why we like it
In the heart of Irpinia, surrounded by luxuriant vegetation, the vines grow on a unique soil, rich in nutrients and thanks also to the strong temperature variations between day and night, the right balance is created between the great aromatic complexity and a nice acidity, which characterizes the production of an authentic Quality Sparkling Wine.
This Irpinia Fiano Brut Sparkling Wine is obtained from the selection of 100% Fiano grapes from vineyards located in the municipality of Luogosano (AV), at an altitude of 380 meters above sea level, and characterized by a clayey-limestone soil type. The vineyards are cultivated with a density of 3500 vines per hectare and a production of 90 quintals of grapes from which 65 hl of wine derive.
The grapes are harvested by hand in boxes in mid-October and transported to the wine cellar where they are carefully selected. Fermentation takes place in steel tanks without the peels for 15 days at a controlled temperature between 12° and 14°. The refermentation process on the lees, in an autoclave, lasts for 7 months. Subsequently it spends a period of refinement of 7 months in an autoclave in contact with the fermentation yeasts and at least 1 month in the bottle.
The characteristics of this wine perfectly matches with first courses of Mediterranean cuisine. It is recommended to taste it in a flute at a service temperature of 6°C.
