Irpinia Falanghina DOC “Vigna Santa Vara”: why we like it
Santa Vara is the area where the Falanghina vineyard is located, from which the Tenuta produces this wine. It is the expression of the vinification in purity of 100% Falanghina grapes grown in a site particularly suited to the point of possessing unique and unreproducible characteristics. In fact, the vineyards are located between Taurasi, Luogosano and Sant’Angelo all’Esca at an altitude of 430 m a.s.l. where the soil is clayey-sandy with good organic content and volcanic elements.
The hand-picked grapes are immediately transported to the cellar, selected, and pressed whole. The clarification of the “flower must” is obtained through a cold processing. Fermentation takes place in large barrels, then the wine ages on its own fine lees, always in wood. Then a phase of refinement in the bottle follows.
Ideal for gastronomic pairings with well-structured dishes, medium-structured land or sea first courses, cheeses, delicately spiced dishes, particularly suitable with oven-cooked seafood. Perfect in combination with sea bass in a salt crust. Service temperature of 10°C/12°C.
