Taurasi DOCG “Sogno”: why we like it

“Sogno” is obtained from 100% Aglianico grapes from vineyards located in the municipality of Castelvetere sul Calore, particularly suited to the production of Taurasi DOCG red wine, at an altitude of 400 meters above sea level, and characterized by a clayey-limestone soil type. The 35 years old vineyard, which has an extension of 4000 meters, is cultivated with a density of 2500/3000 vines per hectare and a production of 65 quintals per hectare.

The grapes are harvested by hand in boxes in mid-November, then transported to the wine cellar where the fermentation process takes place in 30-hectolitre steel tanks. The maturation period of at least 24 months takes place in oak barrels and 500 liter chestnut barrels. Finally, it spends a refinement period in the bottle for more than 3 months.

The particular organoleptic characteristics of this wine elegantly match with red meat main courses, game and aged cheeses. It is advisable to uncork the bottle at least one hour before tasting and to serve it at a temperature of 18°/20° C.
