Greco di Tufo DOCG “Ergo sum”: why we like it
This Greco di Tufo DOCG is obtained from the careful selection of 100% Greco grapes from vineyards located in the municipality of Santa Paolina and San Michele di Pratola.
The grapes are harvested by hand in boxes in mid-October and transported to the cellar where they are carefully processed. The fermentation process takes place in steel tanks at a controlled temperature of the cold decanted must. Then it spends a period of refinement on fine lees for a few months and finally spends another period of refinement in the bottle. The result is a long-lived wine that improves over the years.
The specific characteristics of this wine match elegantly with haute cuisine seafood dishes, shellfish, grilled fish, buffalo mozzarella, white meats, cold dishes. It is recommended to taste it in a tulip glass at a serving temperature of 10 – 12°C.
