Campania Aglianico IGP “XIV”: why we like it
“XIV” is obtained from the careful selection of 85% Aglianico grapes and 15% of other vines, coming from vineyards located in the municipality of Taurasi and neighboring municipalities. To best enhance its characteristics, this wine is produced only in the most favorable years.
The grapes are harvested by hand at complete phenolic ripeness between the end of October and the beginning of November and transported to the cellar where they are carefully processed. After pressing with the simultaneous separation and discarding of the stalks, it remains in fermentation and maceration processes for approximately 18/22 days. The result is a wine with a very low sulphite content.
The characteristics of this wine match perfectly with first courses based on sauces, roasted and grilled red meats, medium-aged cheeses, cured meats. It is recommended to taste it in a glass at a serving temperature of 16-18°C.
