Sannio Greco DOC from Cantine Mustilli: why we like it

This Sannio Greco DOC, first made in 1976, is produced with 100% Greco grapes from vineyards planted in the territory of the municipality of Sant’Agata dei Goti, in the heart of the wine-growing district of the famous Sannio DOC appellation. The vineyards are situated at about 250 meters above sea level on soil consisting of volcanic, limestone and clay elements and enjoy an eastern exposure. The training system used is guyot, with a density of 3300 vines and a production of 60 ql of grapes per hectare.

After harvest, once the grapes arrive at the winery, fermentation begins in steel vats at a controlled temperature of 15°C for about two weeks. Aging procedures take place on the fine lees in steel with periodic batonnage for 3 months and then in bottle for an additional 2 months.

The result is a wine with the perfect balance of acidity and minerality, excellent with traditional cod dishes, perfect paired with genovese, risottos and fresh cheeses. It is recommended to serve at a temperature of 10 to 12°C.
