Irpinia Coda di Volpe DOP by the Boccella Rosa winery: why we like it
This Irpinia Coda di Volpe DOP white wine is produced with 100% grapes deriving from the Coda di Volpe vine. The vineyards are cultivated on territories located at about 500 meters above sea level, in a hilly area, characterized by a clayey, calcareous, arenaceous soil rich in volcanic deposits.
The grapes, harvested by hand, are deposited in 20 kg crates and brought to the mill, where the grapes will be ground and left to rest for 10/12 days in steel tanks. Subsequently, after the pressing phase, it will be left to mature in steel tanks on fine lees for about 6 months, after which it will be ready to be bottled.
This white wine goes particularly well with seafood appetizers and fish-based first courses but its quality is very noticeable with white meats and game such as rabbit. It is also very popular with low-aged cheeses and typical dishes of the Campania tradition such as dried chestnuts or buffalo mozzarella.
