Irpinia Bianco DOC by La Molara: why we like it
This Irpinia Bianco DOC wine is obtained from the careful selection of 50% Fiano and 50% Greco grapes from vineyards located in the municipality of Montefusco and Lapio (AV), at an altitude ranging from 450 meters above sea level. in Lapio at 650 meters above sea level in Montefusco, and characterized by a clayey soil typology. The vineyards are cultivated with a density of 3500/4500 vines per hectare and a production of 70 quintals of grapes from which 49 hl of wine derive.
The grapes are harvested by hand in boxes in mid-October and transported to the wine cellar where they are carefully selected. Fermentation takes place in steel tanks without the peels for 20/30 days at a controlled temperature between 12° and 15°. Subsequently it spends a period of refinement of 3 months in French oak barriques and at least 12 months in bottle. The result is a unique, authentic wine.
The specific characteristics of this wine elegantly match with fish dishes and first courses based on shellfish and seafood. Try it with fish soup, chicken curry and smoked cheeses. It is recommended to taste it in a tulip goblet at a service temperature of 12°C.
