Campania Coda di volpe IGP “Ladra”: why we like it
“Ladra” is obtained from the careful selection of 85% Coda di Volpe grapes and 15% of other vines, coming from vineyards located in central area of the Irpinia region.
The grapes are harvested by hand at the beginning of October and transported to the cellar where they are carefully processed. The winemaking takes place with cold maceration and the fermentation of the cold decanted must takes place at a controlled temperature. Then it spends a careful period of refinement in steel tanks and finally another refinement period in the bottle. The result is a wine with very low sulphite content.
The characteristics of this wine make it excellent as a wine throughout the meal and well-paired with fresh pasta, light dishes and fish dishes. It is recommended to taste it in a tulip goblet at a service temperature of 10°C.
