Irpinia Falanghina DOC “Perzechè”: why we like it
“Perzechè” is obtained from the careful selection of pure Falanghina grapes, coming from vineyards located in the locality that gives its name to the Di Pietro brothers’ winery, in the municipality of Mirabella Eclano.
The grapes are harvested by hand in 20 kg boxes at the end of September and then transported to the cellar to be carefully processed. The winemaking process takes place with cold maceration and soft pressing, the fermentation proceeds at a controlled temperature. Subsequently, it spends a careful period of refinement of 4 months sur lie in stainless steel tanks and finally in the bottle.
The specific taste-olfactory balance of this wine makes it excellent in combination with shellfish, seafood, fish-based dishes, but also with second courses such as white meats flavored with herbs. It is recommended to taste it at a serving temperature of 8 – 10°C.
