Vino Rosso “Volpe Rossa”: why we like it
This “Volpe Rossa” Bio produced by the La Cantina di Enza winery expresses all the characteristics and potential of the Coda di Volpe Rossa grapes, grown under a certified organic regime and coming from an almost completely extinct historic Campania vine, recovered and carefully worked best in the making of this wine. This is a vine still present in some vines in Irpinia since the vineyards cultivated for family use have preserved the explant; in fact the vines are generally grown in the traditional shapes of starseto (“Avellino pergola”), radially or footed. This wine is obtained from the careful processing of Coda di Volpe grapes in the black grape variety, known as Coda di Volpe Rossa, in purity, coming from vineyards located in the municipality of Montemarano.
The grapes are harvested by hand in boxes between mid-November and early December, then transported to the cellar where they are carefully processed. The fermentation process is spontaneous and lasts approximately 20-30 days, without any temperature control, while the pressing takes place through the use of a manual press. It is not clarified or filtered and the refinement procedures take place in exhausted French oak barrels for 24 months, and then continue in the bottle for a period of no less than 12 months.
Its specific characteristics pair well with vegetable-based dishes such as artichokes, first courses with sauces but also with main courses based on land and game.
