Taurasi Riserva DOCG from Di Marco winery: why we like it
This Taurasi Riserva DOCG from the Di Marco winery is made with pure Aglianico grapes from vineyards planted in the hilly Taurasi DOCG area in the municipality of Taurasi. The vines grow on soil consisting of elements of a calcareous and clayey nature that confer particular benefits to the plants. The training system used is the espalier system with a production of 80 ql of grapes per hectare.
The grapes are harvested by hand in 20-kg crates between late October and early November. After harvest, once the grapes arrive at the winery, the fermentation and maceration phase begins at a controlled temperature. Finally, maturation takes place in oak barrels for at least 18 months before bottle aging.
The result? A structured, full-bodied wine that is excellent paired with long-cooked meat dishes, such as braised wild boar or with game stews. Also a perfect companion to barbecued meats such as beef steaks and lamb chops. To fully appreciate its qualities, it should be served at a temperature of 18-20°C, taking care to uncork the bottle a few hours beforehand.
