Taurasi DOCG Riserva “Avos”: why we like it
This Taurasi Riserva DOCG “Avos” by Armando Coppola fully reflects the character and power of Aglianico, thanks to carefully cultivated grapes vinified according to methods that preserve the integrity of the fruit. The grapes, harvested by hand in the last decade of October, undergo a temperature-controlled fermentation, followed by a long maceration of the skins, which adds further complexity to the wine. Malolactic fermentation carried out completely in barriques enriches the flavor profile, giving the wine greater roundness and softness.
The aging process is divided into several stages: 24 months in steel, followed by 24 months in French oak barriques and an additional 3 months in bottle before release. This lengthy process allows the wine to develop a complex aromatic profile and elegant structure, making it ideal for accompanying richly flavored dishes.
Its special characteristics are a perfect match for dishes with a strong character, such as first courses with meat sauce, red meats, roasts, braised meats and hard cheeses. To fully appreciate its qualities, it should be served at a temperature of 18-20°C, taking care to uncork the bottle a few hours beforehand.
